I ended up with a lot of butternut squash at home, so I decided to go on a diet as well.
I want to eat this as a staple food, but how yellow will my skin get if I eat two every day? Just so you know, some people may not be aware, but eating a lot of butternut squash really does make your skin yellow. However, I'm not sure how much I need to eat for it to turn yellow... I'm worried about the beta-carotene content... Will it just turn yellow after a month?
