My hair is turning gray; is this also considered white hair?

My hair is turning gray in places, or has a few strands growing slightly yellow or red, and so on. Are these also part of the process of turning white hair...?

It's definitely not due to a lack of nutrition. The elders say that those things turn into gray hair later on. Is that true...?
