I tried making tteokbokki while managing my blood sugar as much as possible.
I chose rice joraengi tteok for the rice cakes and added chopped konjac instead of fish cakes. I made the seasoning sauce by mixing homemade gochujang with broth. I adjusted the spiciness by adding a little kimchi, chili peppers, and green onions. It isn't very sweet since there is no sugar, but it is moderately spicy, so I really enjoyed it.
